In 2017, we opened "Jukuseisushi Koushiro" in Shirokane, Fukuoka. Inheriting the traditions of Edo-mae, we are exploring the art of aged sushi, in which the fish is laid down to bring out the best flavor to the utmost limit. The perfect harmony of the red-vinegar flavored rice and the sushi rice is the first restaurant specializing in aged sushi in Fukuoka, offering surprises and impressions with every bite. Sushi of the finest quality, created by once-in-a-lifetime maturation

Through our omakase course, we offer seasonable seafood selected from all over Japan and aged to perfection. We use the most appropriate aging method for each type of fish and remove excess water to concentrate the flavor. Combined with the red vinegar rice, you can experience the deep world of aged sushi with its multiple layers of aroma, sweetness, umami, and lingering flavor. In addition to sushi, enjoy creative dishes such as puffer fish milt tofu, a dish with walnuts, and a specialty of seasonal fruit and sea urchin wrapped in makumonaka.

A sense of presence that can only be experienced at the counter

Upon opening the door on a street corner in Shirokane, you will find yourself in a high-quality Japanese space surrounded by the warmth of wood. The counter, made of a single piece of white wood, seats only 10. The spacious seating area allows diners to experience sushi through all five senses, as they listen to the action of nigiri (hand-rolling), the aroma of the sushi, and the sound of the kitchen knife. The quietness and liveliness of the counter makes your special occasions, business entertainment, and time spent with your loved ones even richer.

Our History

Steps to refine tradition and carve out innovation

In December 2017, we opened "Sushi Koshiro" in Shirokane, Fukuoka. Based on the techniques of Edo-mae sushi, we have been pursuing sushi that maximizes the flavor of the fish through our unique approach to aging fish. Eventually, he chose to serve all of his sushi with aged fish, and the name of the restaurant was changed to "Aged Sushi Hikari Shiro. We have taken a new step forward as the first restaurant in Fukuoka specializing in aged sushi. We will continue to respect tradition while being fearless of innovation, putting our heart and soul into every single piece of sushi we serve.

About the Chef

Koichiro Suga

Born in 1972. After training in Japanese cuisine and working as a chef at a ryokan and kappo restaurant, he jumped into the world of sushi at the age of 37. 2017, he gave form to a long-held desire and opened "Jukuseisushi Koushiro". It is a matter of course to use the best ingredients. That is why he puts his heart and soul into the aging process, sparing no effort. As a sake connoisseur, he also values the harmony between food and sake, and wants to continue to serve sushi that makes people want to come back again after the meal. With this belief in mind, I am working with a knife every day.
